Ginger Chicken Udon Noodles
Ingredients:
- 8 oz udon noodles
- 2 boneless, skinless chicken bosoms, cut into slight strips
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 1 tablespoon ground ginger
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 red ringer pepper, cut
- 1 cup snow peas
- 2 green onions, cut
- 1 tablespoon sesame seeds, toasted (discretionary)
Guidelines:
Drain the udon noodles and set them aside following the directions on the package. IN a large pan or wok, heat vegetable oil to medium-high heat. Cook the chicken strips for 5-7 minutes, or until browned and cooked through. Set the chicken aside after taking it from the pan.
Sauté the ginger and garlic in the pan for 1-2 minutes until fragrant. Combine the rice vinegar, sesame oil, soy sauce, and hoisin sauce in a small mixing bowl.
Stir-fry the snow peas and red bell pepper in the pan for 3 to 4 minutes, or until the vegetables are slightly softened but still crisp.
The sauce, the cooked udon noodles, and the chicken should all be returned to the pan. Pan sear for an extra 1-2 minutes, until everything is warmed through and equitably covered with the sauce.Sliced green onions and toasted sesame seeds can be used as a garnish if desired.
